Bacon and Bean Bake
A very tasty meal or snack using runner beans from the garden.
5 Good sized runner beans sliced
4 Rashers of bacon diced (smoked if possible)
2 potatoes diced (peeled or unpeeled)
2 oz of butter
1/2 lb of cheese grated
1/2 pint of milk
Plain flour
Seasoning
- Variation – omit half the cheese and the milk and use a packet cheese sauce instead
First pan fry the bacon until golden and put to one side. Using the same pan and any fat from the bacon, pan fry on a medium heat the beans and potatoes for about 2 minutes until the potatoes take on a little colour and put with the bacon into a shallow ovenproof dish.
Next you need to make the cheese sauce. Melt the butter in a saucepan and remove from the heat. Stir in the flour until a soft paste is made, then wisk in the milk and return to the heat, stirring until thickened. Add to this half the grated cheese and season. Pour the sauce oven the bacon and beans and top with the remaining cheese. OPTIONAL – sprinkle with a little grated nutmeg or paprika.
Bake in a moderate oven about 150 until bubbling and golden on top. Enjoy!
