Beef and Guinness Casserole
This is a stunningly tasty casserole.
2lb of Braising Steak – diced
2 Onions sliced
2 Tablespoons of treacle
1 Tablespoon of Dark sugar
1 Can of Guinness
2 Beef stock Cubes
3 Bay leaves
Lard or cooking oil
Pinch of mixed herbs
2 Turnips
2oz Plain flour
Seasoning
Put the flour into a bowl and season. Toss the meat in the flour ensuring it is all completely coated. Put the lard into a frying pan and heat on a hot ring. Add the diced beef and fry until it starts to brown, dont worry if it sticks to the pan. Once the meat is REALLY brown take it out and put into a casserole dish. Scrape off and bits in the frying pan and add to the casserole dish. Next add a little more fat and fry the onions again until they are REALLY brown, then add to the casserole dish.
Add about a cup of water to the frying pan to clean it and pour this into the casserole dish, adding the Guinness, treacle, sugar, bay leaves, stock cubes, herbs, turnips and half a pint of water. Bring to the boil, cover and place in the oven set to 140 degrees or in the simmering oven of an Aga.
Cook slowly for 3 hours then remove from the oven and pour off the juice from the casserole dish into a saucepan and remove the bay leaves. Bring the juice to the boil and boil for about 10 minutes until it becomes quite thick. Add the thickened sauce to the meat and serve.
