Marrow Marmalade

MARROW MARMALADE
Peel and core a ripe marrow.
Cut it into small pieces and then weigh it all
Use 3/4lb of sugar to each pound of marrow (jam sugar)
Sprinkle the sugar over the marrow.
For each lb of marrow add the juice and grated rind of 1 orange and 1 lemon.
Add I dessertspoon of ground almonds and 1 dessertspoon of ground ginger.
Put all ingredients into a bowl and leave it until the next day but giving
it an occasional stir.
Put it into a buttered pan and bring to the boil. (just grease the pan like
you would a cake)
Boil gently for about one hour until the mixture is transparent.
Test for setting as for jam and put into warm jars and seal.
