Pumpkin Pie (Canadian Style)

Preheat oven to 450 ( gas mark 6 or 200)
Prepare pastry and line a 9” pie plate with prepared uncooked pastry
Blend together
1 1/2 cups pumpkin
2/3 cup lightly packed brown sugar
3/4 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/2 tsp salt
Stir in
2 well beaten eggs
1/2 cup milk
2/3 cup evaporated milk
Bake in the preheated 450 oven for 10 minutes, then lower the temperature to
350 and bake for another 30 to 40 minutes or until just firm in the centre.
A knife will come out clean when inserted.
Serve slightly warm or cold. Refrigerate if pie is to be kept more than an
hour.
